Food has never been more talked about yet collective passion and conversation alone are not enough to create a healthier, fairer and more sustainable food system. As inequality, climate pressures and Ultra Processed Foods reshape what we eat, this panel asks what it would take to turn everyday food enthusiasm into meaningful change – and exposes the barriers in the way of that change.
Author and food-systems commentator Mallika Basu is joined by James Collier (co-founder of Huel), Anna Taylor (Executive Director of The Food Foundation), and Claire Hughes (former Head of Innovation at Sainsbury’s), for a frank and energetic conversation around the cultural, behavioural and structural forces that shape our choices.
They challenge assumptions and look at how our habits can have great systemic impact; considering how curiosity and the smallest of our everyday decisions empower food lovers to become tastemakers and changemakers, helping the food system towards better outcomes for people and planet.

Mallika is a writer, adviser and educator specialising in food, drink and hospitality, driven by a belief in food as a force for good.

Her latest book, In Good Taste: What Shapes What We Eat and Drink – And Why It Matters, explores food systems, sustainability and social impact, empowering readers to become active tastemakers. A features writer and presenter for Good Food, she also publishes the award-nominated newsletter In Good Taste, examining planet-friendly eating and the links between food, people and the planet. Mallika is the author of Indian cookbooks Miss Masala and Masala, and a regular speaker and chair at UK food events. She brings over 20 years’ experience in strategic communications, advising organisations including Jamie Oliver Group, Waitrose and Borough Market.
James Collier
James Collier is co-founder of Huel, a nutritionist, author and a leading voice in the future of food.

A former NHS dietitian, he has advised world-class athletes and ran what was once Europe’s busiest fitness forum. He has contributed to leading food and health publications, sharing evidence-based advice with a wide audience. In 2025, he published Well Fed: How Modern Diets Are Failing Us(and What We Can Do About It), challenging conventional food wisdom, debunking nutrition myths and offering a practical framework for better health. Passionate about demystifying nutrition and promoting ethical eating, James aims to help people cut through confusion and build healthier, more sustainable relationships with food.
Claire Hughes
Claire Hughes is a food innovation leader with extensive experience within UK retail in product development and own-label strategy.

She spent seven years at Sainsbury’s as Head of Own-Label Product Development and Innovation, where she led the transformation of the supermarket’s innovation programme and own-brand food offer while championing reductions in plastic packaging across the business. Hughes joined Sainsbury’s in 2018 from Marks & Spencer, where she held senior roles across food development and nutrition for more than a decade.

Anna Taylor joined The Food Foundation as Executive Director of in June 2015 after five years at the Department for International Development, where she led nutrition policy and supported delivery of the UK’s global commitments to tackle undernutrition. She worked with international organisations including Save the Children and UNICEF, supporting nutrition programmes across Africa and South Asia, and has also worked at the UK Department of Health. She was awarded an OBE in 2014 for services to addressing global undernutrition. She is a member of the London Food Board, a board member of Veg Power, an advisor to the International Food Policy Research Institute, and served as Chief Independent Adviser on the 2021 National Food Strategy.
